Bake with me! Tender Bagels

Today is a Snow Day so I decided to do some baking for breakfast. How about a nice treat? Let me share it with you.

We are having yummy bagels for breakfast. This recipe can also be used for a simple pretzel with a dusting of coarse salt.

Today I am making Everything Bagels. So back to our baking adventures, When using Active Dry Yeast remember, not to make your water too warm in this recipe when proofing your dough, it will kill the yeast. Sugar feeds the yeast to help your recipe rise.

You will need:

1.5 C. of warm water (105-110 degrees)

2 1/4 tsp Active Dry Yeast

1Tbsp Granulated Sugar

2 tsp salt (I like Pink Himalayan)

3.5-4C of AP Flour, Bread Flour or Whole Wheat

1/4c + 2tsp Olive Oil or 1/2 Stick Unsalted Butter

1 egg for your dough

+ 1 egg and Tbsp milk for your egg wash

Everything Bagel Spice Mix Blend or make your own here:

  • 2 tablespoons poppy seeds
  • 2 tablespoons white sesame seeds
  • 2 tablespoons dehydrated chopped onion
  • 1 tablespoon granulated garlic
  • 1/2 tablespoon sea salt

For boiling the bagel: 8-12 cups of water in a stockpot + 1/2 C Baking Soda

Step 1: Proof Your Yeast in your mixer. Water + Yeast + Sugar +Salt. Allow this to sit 5 minutes until you see foaming or bubbling.

Step 2: Turn on your mixer, preferably with the dough hook and begin adding flour 1 cup at a time.

Step 3: Add in your binder (egg) and your dough should start pulling from the sides of the bowl.

Step 4: Add your oil or butter.

Step 5: Set your covered bowl off to the side in a warm environment approximately 1 hour. Your dough should double in size. Alternatively place in a preheated warmed oven for 1 hour. (Turn off before placing your metal bowl in and cover the bowl with foil).

Step 6: Once your dough has risen divide your dough equally to make 6 to 10 bagels. You can double twist to create the effect pictured below.

Step 7: Fill your stock pot with the water and adding the baking soda. This helps give your dough a wonderful texture.

Step 8: Boil the dough on each side 30-45 seconds.

Step 9:When done place them on a parchment lined pan.Using a silicone brush, brush your tops with egg wash and sprinkle your desired seasoning. I use an everything bagel mix which is poppy seeds, sesame seeds, granulated garlic, dried onion & sea salt

Step 10: Now bake in a 425 degree oven for 12 minutes. Your top should be a beautiful brown from your egg wash.

Get yourself a scoop of cream cheese and dive in!
